Yummy, Cheryl’s Mexicorn Salsa

Cheryl, a/k/a Cami, sent me an e-mail with the much requested recipe for her Mexicorn Salsa and asked me to put it on my blog.  Her wish is my command!  Enjoy!

Mexicorn Salsa

Ingredients

2 11 oz. cans Mexicorn, drained

1/2 cup sour cream

1/2 cup real mayonnaise

1-2 scallions, chopped small (including green tops)

salt, to taste

Fritos Scoops for dipping

Preparation Instructions

Mix all ingredients (except Fritos Scoops) together and refrigerate 1 hour to allow flavors to blend.

Serve with Fritos Scoops corn chips for dipping.

Note from Kathy:  Being a Miracle Whip child as opposed to one brought up on “real mayo,”  I bet Miracle Whip would taste just as good.  I would also add some garlic and cilantro.

Creative Images Christmas Party

We had a good time last night and I lucked out and have Russel here to process the photos for me, so I’m on the ball!  We had our Christmas card exchange, tag exchange, Chinese gift exchange and munchies.  Yumm!  First, the cards.  My goal is to get the pics side by side and it only happens accidentally!  Maybe next month, when I have an upgraded puter, I will have more success.  Click on any card for detail, then back to return.

First up, Therese made this joyful card with poinsettias and die cuts.  Cheryl/Cami made this layered Christmas tree with some fussy cut holly.

Ella made this cute Hippo Holly-Days card.  Love his sparkly toenails!  Helen made this Santa checking his list, twice, I’m sure!

Jeannie made this vintage card with tags, fibers and fussy cut holly.

This is my card, using SU’s Joyful Christmas stamp set.  I embossed and fussy cut the poinsettias and leaves.

Here’s Genny’s card using the same stamp set.  She embossed hers on shiny red CS before fussy cutting it out.  Two different looks, same set!

Pam made this simple, peaceful cardinal with white pigment ink for the trees and the bird punch, with a tiny addition for the cardinal’s top knot.  Pat J. made this lovely tree with the embossed frame and pretty poinsettias.

Pat R. made her card with the stick on outlines, micro-fine glitter and markers.  Love that technique.  Tange made this stunning gold embossed peace card.

I was especially curious about these and asked Therese if she knew who made them. She wasn’t being a smarty pants, but she said, “Yes.”  When I poked at her, she said, “Oh, I did.”  Home made turtles.  Yummy.

We finalized our plans for the January stamp camp.  We’re going to make Therese’s little Tim Holtz valise cards, Genny’s tea box with the dahlia on top and Tange’s embellishments.  See last month’s post to see pics.
